Comments: I was looking for a simple breakfast casserole that would take little prep time when my inlaws came in town. This recipe was perfect as I was able to prepare it the night before and then just stick it in the oven for an hour in the morning. My husband and inlaws really loved this dish, but I wasn't super crazy about the texture... but then again, I'm not a big fan of eggs so that may have had something to do with the mixed reviews. Overall I will make this dish again since it was so easy, convenient, and a hit with the family.
Ingredients:
1 lb. bacon (I used turkey bacon and only had 12oz.)
6 eggs
2 cups milk (I used skim)
1 tsp mustard powder (I didn't have this so I used 1 tbsp prepared mustard)
1 tsp salt (I only used 1/2 tsp)
1 cup grated cheddar cheese
6 slices bread
Directions:
Grease a 9x13 glass baking dish and set aside.
Fry the bacon, drain on paper toweling, cut into 1 inch pieces.
Cube the bread into 3/4 inch pieces and set aside.
In a large bowl, beat the eggs.
Add the milk, mustard powder, salt, and blend well.
Stir in the bacon, cheese, and bread cubes.
Stir well to combine.
Pour the mixture into the baking dish, cover with plastic wrap, and refrigerate overnight.
Preheat oven to 350°F and bake for one hour.
