Comments: I found this gem online and thought it would be a neat dessert to make for my nieces 1 year birthday! I added a little red food coloring to the filling to get a nice light pink color to go with the theme of the party which is strawberry shortcake! Enjoy!
Cookie Ingredients:
1 box Betty Crocker SuperMoist devil's food cake mix (any brand will work)
1/2 cup water
1/2 cup vegetable oil
3 eggs
1 box (4 serving size) chocolate instant pudding and pie mix
Filling Ingredients:
1 cup butter or margarine, softened
2 cups marshmallow cream
1 1/2 cups powdered sugar
1 tsp. vanilla extract
Directions:
Heat oven to 350. Lightly spray cookie sheet with cooking spray. In a large bowl beat cookie ingredients with electric mixture on low speed until moistened; beat 1 minute longer on high speed. Drop 2 tbs worth of batter 2 inches apart on the cookie sheet. Bake 8 to 10 minutes or until set (do not over bake!). Cool for 2 minutes then remove cookies and place on cooling racks. Allow 15 minutes for cookies to cool completely. In large bowl, beat filling ingredients with electric mixture on high speed until light and fluffy (add food coloring for a unique look!). For each cookie pie, spread a good amount of filling on the bottom of 1 cooled cookie. Take a 2nd cookie, bottom side down, and place on top.
