Comments: I always wanted to bake a cake from scratch and when I saw this recipe online, I decided to give it a shot. I am so glad I did because it was delicious! It was the perfect cake to bring to a chilly football tailgate!
Ingredients:
2 cups white sugar
1 1/4 cups vegetable oil
1 tsp vanilla extract
2 cups canned pumpkin
4 eggs
2 cups all purpose flour
3 tsp baking powder
2 tsp baking soda
1/4 tsp salt
2 tsp ground cinnamon
Directions:
Preheat oven to 350. Grease and flour Bundt pan. Sift together flour, baking powder, baking soda, salt, and ground cinnamon. In a large mixing bowl combine the sugar and oil. Blend in vanilla and pumpkin, then beat in eggs one at a time (eggs are best at room temperature for cakes). Gradually beat in flour mixture. Spread batter into pan. Bake in preheated oven for 40 minutes or until a toothpick inserted in the center of the cake comes out clean. Once cake has completely cooled top with a cream cheese icing of your choice!
